With Valentine's Day around the corner, I wanted to make a homemade truffle that was slightly better for you than the typical ganache and caramel-filled varieties. A colleague recently made a delicious chocolate peanut butter treat that featured chopped up pretzels in the center. Whole wheat Triscuits are my go-to crunchy salty snack food, so I decided to give them a try instead.

Crunchy Peanut Butter Bonbons
Makes 10
- 1/2 cup crunchy peanut butter
- 1/4 cup chopped triscuits
- honey, to taste
- 2 -3 ounces dark chocolate, melted (or tempered, if you’re feeling fancy)
Combine peanut butter and Triscuits in a bowl. Add honey to desired sweetness. Chill until firm, and roll into 1 inch balls. Working with one ball at a time, dip in melted chocolate and transfer to a parchment lined tray. Refrigerate until set, about 15 – 20 minutes. (These guys look very handsome packed in colorful paper liners!)
