I love a slice of plain pizza, especially late-night, even though it’s not the most nutrient-dense meal. Here’s a nice compromise: poached eggs in tomato sauce. This is one of my favorite quickies, and it’s perfectly at home on the breakfast, lunch, or dinner table. Bring tomato sauce to a simmer, crack an egg, and cover until the white is set and the yolk is still a little bit runny. (My formula is 1 cup of sauce: 1 egg.) Served with crusty bread, this is the pizza parlor's more virtuous cousin.
Poached Eggs in Tomato Sauce
- 2 cups tomato sauce
- 2 eggs
- coarse salt
- red pepper flakes
Bring tomato sauce to a simmer in a saucepan. Add eggs one at a time. Cover pan and cook until egg white is set and yolk is still a little bit runny. Season with salt and red pepper flakes. Spoon into a bowl and serve with crusty bread.

This looks so good, looks like it would cure any craving for something rich, gooey and satisfying. I am going to try it with chunky sauce and a little parmigiana cheese!

It's so good! I just posted about my variation served over pasta. Incredibly satisfying and so easy to make.
