
Alright, it's day 4, and I am feeling great! While walking to the subway this morning I guess you could say I had a spring in my step. I feel light and energetic. As you know, my raw groupies (aka supportive girlfriends) are also dabbling in the raw regimen and my roommate has already dropped 4 pounds! She's had a tempting week, too. Monday night she had drinks with co-workers, where they noshed on bar food ("Surrounded by fried food and beer. Drinking a Chardonnay and hoping that smelling food will keep me strong," she texted me that night); yesterday pastries and bagels just waited for a taker on the counter in her office kitchen.
All my food today has been completely satisfying. I had a dragonfruit-blueberry-lime smoothie for breakfast, more fresh berries and pineapple at a meeting this morning, then some sunflower seeds, and for lunch a delish avocado, kale, radish, and red onion salad with lots of lime juice.
And I am even happier to report that I have discovered a raw dessert for my afternoon sweet tooth. This is worth seeking out even if you don't eat raw. It's called Rawtella (truly!). A riff on the Italian cult favorite, this raw hazelnut spread has a thick texture and a rich cocoa flavor. I nearly cried when it resurfaced at my desk yesterday afternoon.

So intrigued with your kale, avocado, radish,red onion salad. Do you have a recipe for the citrus dressing? This is my first day on this website and in my quest for healthier living, loving the ideas I'm seeing.

Hi Debbie,
Here is a Lemon Herb Dressing (raw) from "Raw Food Made Easy" by Jennifer Cornbleet.
3.4 cup - 4 servings
1/4 c fresh lemon juice
1 Tbs minced fresh herbs(parsley, basil, dill, mint, tarragon or oregano)
1/2 teas cruched garlic
1/4 teas plus 1/8 teas salt
1/4 teas Dijon mustard (optional)
dash black pepper
1/2 cup EVOO
Whisk to combine 1st 6 ingredients, then add EVOO blend well. Keeps for 5 days.

Debbie, I'm so glad you've discovered Whole Living! You'll find a slew of strategies and tips to live a healthier life here. I like to make my citrus dressing with the juice of 1 lime (about 2 Tbsp) and 4 Tbsp extra-virgin olive oil, plus some chopped garlic and freshly grated ginger. Then I season with sea salt and pepper. If you like it less citrusy, then go for a 1:3 lime to oil ratio. And sub in lemon juice if you desire.
