As the temperatures linger in the low 90s in New York City this week, I find myself embracing as many cooling foods and drinks as possible. More than 90 percent water, cucumbers are ultra hydrating, and rich in beneficial minerals including silica, potassium, and magnesium. Silica is believed to improve the complexion and skin's radiance.

Celebrate summer and beautiful skin with this Simple Cucumber Smoothie!

Simple Cucumber Smoothie
Serves 1

1 organic cucumber, peeled and sliced
1 tablespoon extra virgin olive oil
Juice of ½ a lemon

Place cucumber, olive oil, and juice of ½ a lemon into a blender and blend until smooth and creamy. Pour into a glass and enjoy! Garnish with a round of lemon if desired.
