Make This Farmers' Market Creamy Apricot Smoothie

The apricots at my local farmers' market are beautiful this week. I've been enjoying them sliced on top of salads, topped with a touch of cashew cream, and blended in this Apricot and Cream Smoothie. I combine fresh apricots with a handful of raw cashews for a not-too-sweet, satisfying refresher. The cashews make a dairy-free cream and provide a boost of protein. Simple and delicious!

Apricot and Cream Smoothie
Serves 1

1/4 cup raw cashews
1/2 cup almond milk
2 apricots, pitted
1 teaspoon honey or 1/16th teaspoon Stevia
1 cup ice
1 sprig mint, optional

Combine ingredients in a blender and blend until smooth and creamy. Pour into a glass and garnish with mint if desired. Enjoy!

    by the way i'm from across the pond, we dont have Stevia here, but I heard that it's marketed as a healthier alternative to sugar is it really better?
