
My husband and I are at the beach again this week and continue to challenge ourselves each day to come up with easy-to-make breakfast, lunch, and dinner ideas from our cozy hotel room. It certainly has been interesting not having a stove or an oven! What we do have: a blender, food processor, and small fridge. Fortunately, the markets out here in Montauk, New York keep us inspired.
This weekend we came across some gorgeous cantaloupe melons. So, we've been making soups, salsas, smoothies, you name it. This cantaloupe smoothie with fresh mint and basil has been on frequent rotation for me this week. Enjoy!
Cantaloupe Smoothie with Mint + Basil
Serves 1 (approximately 150 calories)
2 cups cantaloupe, cubed
1/4 avocado
1 tablespoon fresh mint leaves
1 tablespoon fresh basil leaves, plus some for garnish
Splash of water
4-5 ice cubes
Place ingredients into a powerful blender and blend until smooth and creamy. Add additional ice to thin or thicken, as desired. Garnish with basil.

Melon, including cantaloupe, contains a lot of water. Cantaloupe is also rich in beta-carotene, which converts to vitamin A in your body. Vitamin A functions as an antioxidant and also helps boost your vision and immune system.
Avocado contains good-quality fats (as do “cloudy” extra-virgin olive oil and coconuts), and when enjoyed in moderation actually stores those fats in the body as energy, which helps you lose weight in the long run.
