Meatless Monday: Use Your Melon in this Watermelon and Tomato Summer Salad

There’s nothing I love more than a refreshing summer salad, but sometimes I don’t feel like eating more romaine or spinach. Luckily I stumbled upon a version of this simple, flavorful salad when dining last week at Nashville's Marché, a delicious, charming French bistro known for its innovative and fresh food. On a hot summer day, this salad cooled me off right away.

Back at home, I recreated this salad in sixty seconds flat (seriously!), making for one of the quickest and most refreshing salads ever. The crisp sweetness from the watermelon blends perfectly with the onion, fresh basil, and tomatoes. A drizzle of balsamic is all you need to meld the flavors in this instant summer classic.

Watermelon and Tomato Summer Salad

1 1/2 cups cubed watermelon
1/2 cup halved grape or cherry tomatoes
¼ red onion, sliced
3 large basil leaves, roughly chopped
Drizzle of balsamic

Toss watermelon, tomatoes, onion, and basil together in a medium bowl and drizzle with balsamic.
