
My husband and I are spending time together at the beach this week. He's a huge fan of watermelon and fortunately it's fresh, plentiful, and delicious this time of year. From our cozy hotel room, we've been dicing up wedges for salads, gazpachos, and smoothies. Though ridiculously simple, this watermelon smoothie has been my favorite breakfast so far this week. I make mine with just a few cubes of watermelon, fresh basil, and a dash of coconut water. There's something about juicy watermelon that is just so refreshing.
Simple Watermelon Smoothie
Serves 1-2 (about 250 calories)
Ingredients
2 cups diced watermelon, frozen
1 tablespoon fresh basil, packed
1 cup coconut water
1/2 cup water
Directions
Combine the ingredients into a powerful blender and blend until smooth and creamy. Add additional water to thin, if desired. Enjoy!

Watermelon is 92% water, which is a perfect source of water.
How about adding a bit of rose water in the recipe? Rose water has wonderful cooling properties and helps to regulate the body temperature. It also boosts the holiday mood greatly! hope you are having a great holiday!
