The kale at my local farmers' market is absolutely beautiful right now. This weekend I purchased several curly green bunches and have been enjoying it in salads, roasted in the oven (it makes the most fabulous chips), sautéed with a touch of coconut oil, and even baked into my favorite oatmeal chocolate chocolate chip cookies (I swear!). And if incorporated in the right way, kale is also fabulous in smoothies.
Creamy Banana Kale Smoothie
Serves 2
1 1/2 cups curly green kale (preferably organic), loosely packed, stems removed
1 1/2 banana, frozen
1 1/2 cup water
1/2 cup ice
Better-for-you ingredients
Kale is full of nutrients with antioxidant and anti-inflammatory benefits that help your body stay vibrant and youthful. Kale is also packed with chlorophyll. Chlorophyll removes heavy metals and chemical toxins from your body.
Directions
Combine the ingredients into a powerful blender and blend until smooth and creamy. Thin with water if desired. Enjoy!

If you'd like it to be a little on the sweeter side use coconut water.

It's amazing to me how well kale works in a smoothie when you give it a little extra time in the blender. It's such a great way to eat more raw kale! Let me know what you think!

It was very good. However, could you use unsweetened almond milk in place of the water? Do you know any calorie count as well? Probably not much .. Just frm the bananas mostly. I will make again for sure!

Yes! I'm glad you did. That is one of my favorite tricks, generally, when it comes to smoothies. Using some almond milk and water together.
