Growing up, I always knew it was spring in my house when my mom served a watercress salad for dinner. I'm pretty sure, actually, that she ate a watercress salad on most days in spring. Well, her love of the leafy green must have rubbed off on me; I just realized the other day that I too eat the vitamin-packed vegetable as often as I can find it. Fortunately for me, watercress is a popular detox vegetable this season. Health beauties love that it's rich in chlorophyll, a natural detox agent that helps purify and foster healthy blood and a vibrant body.
Serves 1 (~150 calories, with Stevia)
1/4 cup watercress, loosely packed
1/2 McIntosh Apple, cored and roughly chopped
1/4 avocado, peeled and pitted
1/16 teaspoon Stevia, spoonful of honey or other natural sweetener
1 cup water
3-4 ice cubes
Place ingredients into a good powerful blender until smooth and creamy. Thin with water or thicken with ice if desired. Enjoy!
