Smoothie Wednesday: Detox with Beets and Blueberries

Posted by

I love beets. Roasted or raw. Left raw and shaved in a chopped salad, they add a delicious crunch. Freshly pressed in a vegetable juice, they deliver a burst of energy. I also love a beet or two blended in a smoothie. Beets are a great source of fiber. They're also rich in folate, a B vitamin essential for helping the body develop red blood cells. Red blood cells are cleansing and superstars for vitality---they're constantly delivering oxygen to and removing toxins and waste from your cells. Give yourself a sweet retreat this week and sip on this naturally detoxifying tonic.
1 medium raw beet
, skin on, roughly chopped
1 cup blueberries, frozen
1/4 cup cashews
1/2 cup almond milk
1 cup water
1/8 tsp Stevia
or 1 Tbsp good-quality honey or maple syrup
Handful of ice

Directions
Combine the ingredients above into a powerful blender until smooth and creamy. Thin with water or thicken with ice if desired. Enjoy!
