I absolutely love wheatberries for breakfast. I've been making different variations of the wheat berry breakfast bowl recipe from 101 Cookbooks for a while, and this one turned out especially delicious. The great thing about this is you can make a single serving for yourself, or enough for a crowd. To save time, make the wheatberries and apple filling the night before.
Baked Apple Wheatberry Cups
4 apples
1 tsp cinnamon
1/2 cup dried fruit
1/4 cup walnuts
brown sugar for sprinkling on top
1 tbsp butter, divided
1/2 cup cooked wheat berries
1 cup greek yogurt
Slice the tops off of the apples and scoop out the insides and save for filling. Mix together the apple bits, dried fruit, walnuts, and cinnamon. Divide the filling between the apples, sprinkle with brown sugar and a little bit of butter, wrap each apple with tin foil and bake for 35-45 minutes at 375, the apples will be sizzling in the foil when they're finished. If you have a larger amount of apples, place in glass baking dish covered with foil for same amount of time. When finished, spoon the wheatberries on top of each apple, top with greek yogurt, serve warm.
