Welcome to the first post of Better Breakfast! I'm Jillian, the photo assistant here at Whole Living and all around lover of breakfast. It is hands down my favorite meal of the day. While I like to eat and photograph all kinds of food I especially enjoy coming up with new ways to keep my first meal of the day delicious and healthy.
Oatmeal is a big staple for me, and this was the first time I made it slow-cooker style. I like to plan ahead, and a lot of the time I'll do some breakfast prep the night before so I don't feel rushed in the morning. This is perfect to make ahead of time, plus you can spoon it into mason jars and take it on-the-go!
Slow-Cooked Oatmeal with Cranberries
Serves 4
1 cup steel cut oats
2 tablespoons brown sugar, plus more for serving
½ teaspoon salt
1 cup dried unsweetened cranberries
3 cups water
1 ½ cup low-fat milk, plus more for serving
1 teaspoon pure vanilla extract
2 tablespoons flax seed or wheat bran
Spray your crock-pot liner with cooking spray. Mix the oats, brown sugar, salt, and cranberries. Pour in water, milk, vanilla and stir to combine. Add flax seed or wheat bran. Cook, covered, over low, about 7 hours. Serve with milk and brown sugar.
