Smoothie Wednesday: Blueberry Walnut

When my sister and I were younger, my Grandmom would invite us over for tea. She would pull out her teacups and saucers and serve tea with blueberry jam and walnut butter sandwiches. (I think she knew how much my sister and I loved our PB&J's!) She would serve the sandwiches on toasted white bread---ends trimmed---drizzled with just a touch of honey. My sister and I would go bananas. This smoothie is a take on this happy childhood memory.

Blueberry Walnut Smoothie
Serving Size: 1 (~240 calories – with Stevia)

3/4 cup blueberries, frozen
1/2 banana, frozen
1/4 cup walnuts
1 cup water
1/4 teaspoon cinnamon
1/2" fresh ginger, peeled, minced
1/16 teaspoon Stevia (or honey)
1-2 ice cubes, to thicken

Directions
Place ingredients into a good powerful blender until smooth and creamy. Thin with water or thicken with ice if desired. Enjoy!

Better-for-you ingredients

Berries, including blueberries, are packed with antioxidants that fight free radicals. Free radicals are believed to contribute to disease and accelerate aging.
