
Over the past few weeks, I’ve indulged in some fresh-pressed vegetable juices. Carrot juice is one of my all-time favorites. Yesterday afternoon, with a glass of fresh carrot juice on hand, I whipped together this smoothie with fresh ginger and a dash of cumin. I don’t know why I waited so long to do so because it was a truly energizing afternoon pick-me-up.
Carrot Juice Smoothie
Serves 1 (~280 calories)
1 cup carrot juice
1/2 head romaine lettuce
1/2″ fresh ginger, peeled, diced
1/4 teaspoon cumin
1 tablespoon Udo’s Oil*
3-4 ice cubes

Directions
Place ingredients into a good powerful blender until smooth and creamy. Thin with water or thicken with ice if desired. Enjoy!
