Smoothie Wednesday: Carrot Juice

Over the past few weeks, I’ve indulged in some fresh-pressed vegetable juices. Carrot juice is one of my all-time favorites. Yesterday afternoon, with a glass of fresh carrot juice on hand, I whipped together this smoothie with fresh ginger and a dash of cumin. I don’t know why I waited so long to do so because it was a truly energizing afternoon pick-me-up.

Carrot Juice Smoothie
Serves 1 (~280 calories)

1 cup carrot juice
1/2 head romaine lettuce
1/2″ fresh ginger, peeled, diced
1/4 teaspoon cumin
1 tablespoon Udo’s Oil*
3-4 ice cubes

Better-for-you ingredients

Udo’s Oil is a combination of flax, sunflower, and sesame seed oils mixed with rice, oat, and coconut oils. It is a vegetarian supplement rich in essential fats (omega-3 and omega-6). Every cell, tissue, gland, and organ in your body is dependent upon the presence of essential fatty acids; they also help support a healthy brain, good mood, and strong nails and hair. I recently started taking 1-2 tablespoons a day in smoothies, drizzled on salads, or even on its own.

Place ingredients into a good powerful blender until smooth and creamy. Thin with water or thicken with ice if desired. Enjoy!
