
As I mentioned to you all last week, I'm on a kale kick. It’s now the main green I use in my salads and my smoothies. Kale is full of antioxidants and anti-inflammatory benefits that help your body stay vibrant and youthful. That said, it can be a little intimidating when you first start incorporating the dark leafy green into your diet. But I find it can be easily tamed and enjoyed in a smoothie. This kale version with strawberry and cardamom is on high rotation in my home this week.
Kale Smoothie With Strawberry And Cardamom
Serves 1 (about 150 calories)
1 cup strawberries, frozen (preferably organic)
1 cup kale, loosely packed (preferably organic)
1/4 tsp cardamom
1/3 cup plain coconut milk or Greek yogurt
1 cup water
1/16 tsp Stevia (or honey)
1-2 ice cubes, to thicken
Better-for-you ingredients
Cardamom is a warm, sweet spice. It is considered an excellent digestive and believed to have detoxifying properties.
Directions
Place ingredients into a powerful blender until smooth and creamy. Thin with water or thicken with ice if desired. Enjoy!

Hi
I am new to healthy eating and I was wondering if there is any serving of protein in this smoothie? I am diabetic and I'm supposed to have a protein in this morning. Could I substitue Tofu instead of yogurt do you think?
