Smoothie Wednesday: Watermelon and Jalapeño

There is a hip boutique hotel and restaurant out on the tip of Long Island called Ruschmeyer’s. It’s got an electric energy on the weekends. One of their signature drinks is made with fresh summer watermelon. It’s cool and refreshing….and just screams summer to me! This smoothie is inspired by a recent evening spent there under the early skies of summer.

Watermelon Smoothie With Jalapeño
Serves 1 (about 90 cals)

2 cups cubed watermelon
2 thin slices jalapeño pepper, seeds removed
1-2 ice cubes, to thicken

Better-for-you ingredients
Watermelon has a cooling nature. And don't discount its rind: it's rich in silicon and detoxifying chlorophyll.

Place ingredients into a powerful blender until smooth and creamy. Thin with water or thicken with ice if desired.
