Can you tell that I like blueberries? My blueberry kick continues this week with these easy-to-make waffles. I recommend using fresh berries, but if you only have frozen on hand, make sure not to let them thaw before adding them in. The batter keeps well overnight, so you can do all the mixing ahead of time, bring the batter to room temperature in the morning and you'll be good to go.
Blueberry Yogurt Waffles
1 cup whole wheat flour
3/4 cup all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon cinnamon
1/4 cup sugar
1 cup plain fat-free Greek yogurt
1 cup skim milk
2 eggs
1 tsp vanilla
1/2 cup applesauce
1 cup fresh blueberries
Combine dry ingredients, set aside. Mix yogurt, milk, eggs, vanilla, apple sauce until well blended. Pour over dry ingredients, mix until just combined, fold in blueberries. Pour batter onto heated waffle iron, bake until brown. Serve warm with maple syrup and top with more fresh blueberries.
