If you're looking for a healthier version of your favorite stir-fry, it can be done with gluten-free penne and fresh ingredients. Don't like the spice usually accompanied by the heavy dish? It doesn't need to have those traditional Asian flavors to be delicious, either. Alas, a stir-fry that plays on different ingredients, like rainbow Swiss chard, to bring out a unique, zesty flavor.
Rainbow Swiss Chard Penne Stir-Fry
Gluten-Free and Vegan
2 cups TruRoots gluten-free penne pasta
1 tablespoon Barlean's coconut oil
1 large bundle of Rainbow Swiss Chard
1/3 cup walnuts, finely chopped
2 teaspoons fresh lemon juice
1 teaspoon fresh lemon zest
6 chives, finely chopped
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
Cook pasta according to package directions. Meanwhile, cut rainbow Swiss chard into 1/2 inch pieces. Heat coconut oil in a large skillet over medium heat. Add Swiss chard; cook until tender, approximately 3 minutes. Remove from heat; drain excess liquid. Add chopped walnuts, lemon juice, lemon zest, chives, sea salt and pepper. Drain pasta and gently toss with Swiss chard mixture. Transfer to a large serving bowl; serve warm.
