Fall is my favorite time of year, especially because of the fresh apples. I already have a stockpile in my kitchen from the farmers market. Lately my favorites vary between Gala, Golden Delicious, and Macintosh. I used Macintosh in this recipe -- any apple with a sweet flavor will work perfectly.
Nutty Apple Muffins
1/2 teaspoon ground cinnamon
1 cup whole wheat pastry flour
1 cup all-purpose flour
3/4 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup canola oil
2 large eggs
1 cup natural applesauce
1 teaspoon vanilla extract
3/4 cup low-fat buttermilk
1 apple, peeled, cored and cut into 1/4 inch pieces
1/4 cup walnuts, plus 2 tablespoons for topping
Preheat oven to 400, lightly spray a 12-cup muffin tin and set aside.
Whisk together the all-purpose and whole wheat flour, cinnamon, baking soda and salt. In a large bowl combine the eggs, brown sugar, applesauce, buttermilk and vanilla. Whisk in flour mixture until just combined. Gently stir in the apple chunks and 1/4 cup walnuts. Pour the batter into the prepared muffin tin and sprinkle with remaining walnuts. Bake for 20 minutes, until edges are golden brown.

These muffins are fantastic! I was a little worried they'd make a mess because I filled the muffin cups up almost to the top, but they puffed up beautifully and were delicious!
