I was in the market yesterday. A man standing next to me pick up a gorgeous bunch of radishes -- big and hearty with purply stalks and leafy greens. He asked Nivia, the lovely farmer, to lop off the leaves. She begged him no and explained that the tops contained so many vitamins and nutrients that it was a crime to throw them away. Instead, Nivia offered a simple recipe: three ingredients (chop and sauté with a glogg of olive oil, pinch of sea salt and crack of pepper). The man, despite being in the market) was flabbergasted at the thought of having to cook. So I took them -- lucky me -- and did exactly what Nivia suggested.
They are divine -- the type of thing that instantly makes you feel good -- strong, alive and full of Qi. Perfect lunch. Perfect day.
For a bit of staying power try the tender greens mounded over toasted grainy bread and a tablespoon of pumpkin seed butter.
