
My mom popped into town for a few days this week to spend a little time with my son Halston and me. Every time she comes to visit she tries to bring a little something special from her garden: a few flowers, herbs, or vegetables. This time she came with a tiny basket of strawberries, some of the very last ones from her patch. There were just enough for snacking and a few leftover to blend in a smoothie. If you’re looking to finish off the end of summer with a hint of sweetness, give this creamy strawberry smoothie a try.
Strawberry Smoothie
Serves 1 (275 calories)
1 cup frozen strawberries
1 cup coconut water
1/4 avocado, peeled and pitted
1 vanilla bean, seeds scraped
1/2 – 1 tablespoon honey
3-4 ice cubes

Strawberries provide an anti-inflammatory lift and a punch of extra fiber in your day.
Directions
Place ingredients into a powerful blender until smooth and creamy. Thin with water or thicken with ice if desired. Enjoy!

Slightly curious, how does the avocado contribute? I would think its flavor would get lost.

The avocado, thickens the smoothie just a bit. You could also use half of a banana if you prefer!

Avocado is so good in smoothies.I love how creamy it makes them. I'll have to give this a try.
