Honey Cilantro-Soaked Quinoa
1 1/2 cups quinoa
1 tablespoon honey
1/3 cup fresh cilantro, finely chopped
1/3 cup salted peanuts
3 tablespoons freshly squeezed orange juice
2 teaspoons fresh orange zest
3 scallions, thinly sliced
1/4 teaspoon sea salt
1/4 teaspoons freshly ground pepper
Cook quinoa according to package directions. Remove quinoa from heat and transfer to a large serving bowl. Add honey; gently toss to combine. Set aside covered for 10 minutes to soak. Stir in remaining ingredients. Transfer to four serving bowls. Enjoy.
