Get the taste of a beloved holiday spice without literally (sort of) eating a house. This ginger-enhanced pasta dish brings together seasonal flavors with the crunch of pine nuts for a very merry gluten-free main.
Festive Cherry Gingerbread Pasta
1 pound gluten-free pasta such as Tru Roots
1/2 cup almond milk
1 tablespoon Barlean's Flax Oil
1/4 cup dried cherries, finely chopped
1 tablespoon pine nuts, toasted
1/4 cup chopped fresh parsley
1 teaspoon cinnamon
1 teaspoon ginger
1 tablespoon Barlean's ground flax seeds
1 tablespoon orange zest
1/4 teaspoon sea salt
1/4 teaspoon pepper
Cook pasta according to package directions. Remove from heat, drain and transfer to a large bowl.
Add remaining ingredients to pasta; gently toss to combine. Transfer to 4 serving bowls.
