Bio: After 15 years of eating and cooking gluten free, Carol Kicinski founded Simply...Gluten Free to educate and inspire those with celiac disease or intolerances to gluten, dairy, peanuts, grain, and beyond, and to create a community of gluten-free bloggers around the globe. Her cookbook, Simply . . . Gluten-free Desserts: 150 Delicious Recipes for Cupcakes, Cookies, Pies, and More Old and New Favorites, contains 150 recipes for gluten-free cupcakes, cookies, pies, sweet breads, puddings, cakes, and ice creams.

My philosophy: Look at the world of food not in terms of what I can't eat but what I can!

If I weren't doing what I'm doing now, I'd be: I am doing exactly what I want to do now. If I could continue to do this and travel the world, well then my life would be perfect!

Favorite piece of advice: Eliminate from your life all things toxic, whether it be food or people. Fill your life with people and things that enhance it.
